Grilled Scallop Skewers

Scallops are delicious, tender and delicate. Grilling scallops is one of the simplest ways of cooking them, all you need to do is brush a little oil on them and cook for three minutes. With scallops the simplest recipes are the best.

This recipe is perfect for a dinner party; grilled scallops and peppers on skewers look beautiful and are very quick to cook, so you won’t keep your guest waiting long. Scallops are a luxurious treat, so your guest will feel very special, and they taste fantastic with the sweet yellow pepper.


  • 24 scallops
  • 1 yellow bell pepper
  • 1 tbsp olive oil
  • Skewers


  1. Soak the wooden skewers, so they won’t burn.
  2. Pat the scallops dry.
  3. Thread 3 scallops onto each skewer with pieces of pepper in between scallops.
  4. Brush the scallops with a little olive oil.
  5. Heat a griddle pan until hot or preheat your grill, cook for 90 seconds either side.
