Honey Glazed Chicken

A quick easy roast dinner perfect for two. If you don’t have much time on your hands and want to cook to impress, honey glazed chicken is simple and delicious, so it is hard to go wrong.

The soy sauce and honey soaks into the chicken, keeping it moist and tender while the honey glaze makes the skin crispy, sweet and very tasty. Perfect served with rice or new potatoes and salad. Enjoy and relax with a glass of white wine to make a perfect evening.

Ingredients

  • 2 chicken breast
  • ½  lemon
  • 1 tbsp honey
  • 1 tbsp dark soy sauce
  • 1 tsp ginger grated
  • 1 garlic clove crushed

Method

  1. Squeeze the lemon in a bowl, stir in the honey, ginger, garlic and soy sauce. Marinade the chicken for one hour, over night is best.
  2. Preheat the oven to 190C or gas mark 5. Place the chicken breast in a roasting tin, skin side up and spoon the juice on top.
  3. Bake for 30-35 minutes, basting every 10 minutes, cook until done.
  4. Sever with salad potatoes or rice.
