How do you make guacamole

A.� It's an easy dish to concoct, consisting of avocado, minced onion, lime juice, chopped coriander and tomato, a little chilli sauce and salt and pepper. The key to a successful guacamole, which hails from Mexico, is using properly ripe avocado, such as Hass. Have all the ingredients ready and start by peeling, coring and deseeding the tomatoes, then finely chop. Halve the avocodoes and scoop the flesh into a bowl. Add a little lime juice and mash with a fork. Then add the other ingredients.

A.� Traditionally Mexican food such as enchilladas or burritoes. It's often served with grated cheese and sour cream as an accompaniment to rich and spicy chicken or meat dishes. It's also good as a dip with raw vegetables and breadsticks.

Q.� What else can you do with avocadoes

A.� Avocados are extremely nutritious as�they contain large amounts of minerals and vitamins, especially vitamin A, which is good for vision.�They are often served sliced in half with shellfish or strong cheese.

Try this recipe for Stilton & Grape Avocadoes:

(serves 4)

2 ripe avocadoes, halved and stoned

juice of 1/2 lemon

100g (4oz) blue Stilton, crumbled

75g (30z) black seedless grapes

freshly ground pepper

45ml (3tbsp) fresh soured cream

25g (1oz) toasted breadcrumbs

salad and grapes to garnish

Scoop the flesh from the avocadoes, chop and mix with lemon juice. In a bowl, mix Stilton, grapes, pepper and soured cream with avocadoes. Spoon back into avocado shells and sprinkle over breadcrumbs. Serve with a salad and grape garnish.
