Lemon Mousse

Serves 4

Lemon mousse is a deliciously creamy dessert, the sharp fresh lemon flavour complements the smooth cream and the sweet flavours of the mousse beautifully. So if you want to whip up a quick summery dessert for after dinner this is a great choice. 

Ingredients

  • 120ml freshly squeezed lemon juice
  • 2 tsp finely grated lemon zest
  • 200g sugar
  • 470ml double cream, beaten to soft peaks
  • 1 large egg
  • Pinch of salt
  • 3 ½ tbsp butter

Method

  1. In a saucepan, combine the sugar, butter, lemon juice, lemon zest and salt.
  2. Cook over a low heat until the butter and sugar have melted.
  3. Add the egg in and slowly stir.
  4. Cook for about one minute over a medium heat, stirring constantly.
  5. Remove from heat allow to cool.
  6. Fold in the whipped cream.
  7. Cover and refrigerate.
