Lemon Mousse

Serves 4
Lemon mousse is a deliciously creamy dessert, the sharp fresh lemon flavour complements the smooth cream and the sweet flavours of the mousse beautifully. So if you want to whip up a quick summery dessert for after dinner this is a great choice.
Ingredients
- 120ml freshly squeezed lemon juice
- 2 tsp finely grated lemon zest
- 200g sugar
- 470ml double cream, beaten to soft peaks
- 1 large egg
- Pinch of salt
- 3 ½ tbsp butter
Method
- In a saucepan, combine the sugar, butter, lemon juice, lemon zest and salt.
- Cook over a low heat until the butter and sugar have melted.
- Add the egg in and slowly stir.
- Cook for about one minute over a medium heat, stirring constantly.
- Remove from heat allow to cool.
- Fold in the whipped cream.
- Cover and refrigerate.
