New York Cheesecake

New York is famous for their cheesecake and with good reason, New York cheesecakes are delicious. For those of us who can’t fly there right away, this wonderful cheesecake recipe gives you a small taste of the big apple.
New York cheesecake is subtle and simple but with a stunning texture, to be savoured with every mouth full. Cheesecake is a fabulous dessert for any celebration, you rarely go wrong if you serve a New York cheesecake it is a favourite dessert for so many people.

Ingredients

For the Base

  • 125g biscuit
  • 85g butter, melted
  • 5 tbsp caster sugar

For the Filling

  • 600g Philadelphia cheese
  • 250g caster sugar
  • 3tbsp plain flour
  • 1tsp vanilla extract
  • 3 eggs
  • 280ml sour cream

Method

  1. Preheat an oven to 180C or gas mark 4. Line and grease a 23cm spring form cake pan.
  2. Blend the Biscuits in a food processor until they turn to crumbs, mix the melted butter and sugar in. Firmly press the biscuit mix on to the base of the pan.
  3. Mix the cheese, sugar and flour together. Whisk the eggs in one at a time. Whisk in the vanilla extra and then the sour cream, until the mix is smooth.
  4. Pour the mix into the cake pan and bake for 45 minutes.
  5. Leave to cool then refrigerate for at least 4 hours, over night is best.
