Pea Soup

Pea soup is a fresh, smooth and delicious lunch or a perfect starter. It is simple and takes no more than 15 minutes to make, so great for when you are in a hurry. Pea soup can be served cold or hot, in summer a cold refreshing pea soup makes a delicious lunch to cool down with. In winter peas may be out of season but frozen peas work equally as well, perfect for a creamy luxurious hot pea soup to warm up with.

Ingredients

  • 450g peas
  • 1 litre vegetable stock
  • 30g butter
  • 30g flour
  • ½ onion, chopped
  • 150ml cream
  • Salt and pepper

Method

  1. In a sauce pan melt the butter and gently fry the onions.
  2. Add the stock and bring to a boil.
  3. Add the peas and salt and pepper to taste. Cook for a couple of minutes until peas are tender.
  4. Remove from heat add the cream, blend the soup until smooth.
  5. Reheat to serve warm or chill to serve cold.
