Pineapple Fried Rice Served In A Pineapple

Pineapple fried rice is a fantastic dish, as well as the pineapple tasting great, serving in the pineapple shell looks pretty spectacular, very kitsch and great fun. Pineapple fried rice can be served as a main or a side dish, and as a side dish it will easily serve four people.
This dish is great fun and a wonderful way of getting the kids to experiment and try new foods; they will be sold on how it looks even before they taste how good it is. Pineapple is sweet and juicy and is a favourite fruit for many children. The juices from the pineapple infuse with the rice and flavours everything with a wonderfully sweet, fresh taste. This dish is also low fat, nutritious and tasty so makes a great family meal and perfect for a special occasion.
If your children aren’t used to hot food or do not like chillies you can alter the amount, cut out the seeds or use bigger chillies, normally the bigger the chillie the less hot it is.
Ingredients
- 1 pineapple
- 2 tbsp vegetable oil
- 1 onion, chopped
- ½ red pepper, diced
- 2 red small chillies, chopped
- 2 green small chillies, chopped
- 150g chicken, diced
- 100g cooked prawns
- 250g cooked cold rice
- 50g roasted cashew nuts
- 2 stalks spring onions, chopped
- 2 tbsp light soy sauce
- salt to taste
- 1 tsp fish sauce
Method
- Marinate the chicken with a tbsp of soy sauce for at least one hour.
- Remember you will be serving in the pineapple shells so don’t through them away. Clean the pineapple then cut the pineapple in half lengthways. Remove the pineapple flesh and finely chop, you will need about 150g of pineapple.
- Stir fry the chillies, onions and peppers when soft add the chicken and stir fry until cooked.
- Stir in prawns and rice until they are hot.
- Add in pineapple, cashew nuts & spring onions together with the remaining soy sauce and fish sauce.
- Finally fill the pineapple shell with the fried rice to serve.
