Raspberry Pavlova

Raspberry Pavlova looks beautiful as well as tastes beautiful, and is a really simple dessert with very few ingredients. If you are rushed off your feet with party planning and want a spectacular final course that looks stunning, then look no further, Raspberry Pavlova is perfect.  The red of the raspberries against the white meringue looks irresistible, the juicy soft fruits compliment the crisp and chewy meringue which will leave your guest feeling very greedy and wanting more.

Ingredients

For Meringue

  • 4 large egg whites
  • 225 g caster sugar

For toping

  • 150g raspberries
  • 300ml double cream, whipped

Method

  1. Pre-heat the oven to 150C or gas mark 2.
  2. Line a baking sheet with baking paper.
  3. Place the egg white into a large bowl and whisk on full speed until soft peaks form.
  4. Add sugar a spoon full at a time, continuing to whisk at full speed.
  5. Spoon the mix on to the baking sheet in a round circle shape
  6. Bake in the oven for 10 minutes, turn heat down to lowest setting and leave for 2-3 hours, until crisp, the meringue is cooked when the baking paper easily peals away.
  7. Allow the meringue to cool, and then spoon the cream onto the centre of the meringue and pile the raspberries over the cream.
