Rocky Road

Rocky road is about as indulgent as you get and it is a perfect recipe to make with children, sweet, fun, messy and no cooking to do at all. This recipe is versatile and you can adjust it to suit your taste, so long there are lots of marshmallows and chocolate everything else can be changed. Nuts and dries fruit work great, or you could have a rummage through you cupboards and make the most of any sweets and chocolate left over’s, crunchies, fudge, chocolate buttons are all great, any chocolate is great.

This is a basic rocky road recipe that is really yummy. But once you have become a rocky road and chocolate expect I suggest you go wild and experiment.

Ingredients

  • 225g butter, unsalted
  • 100g milk chocolate, broken into pieces
  • 2tbsp golden syrup
  • 100g  Maltesers
  • 100g  white chocolate chips
  • 100g mini marshmallows
  • 225g ginger biscuits, broken into pieces

Method

  1. Line a 20cm square cake tin with cling film.
  2. Melt the butter, golden syrup and milk chocolate together in a bowl over simmering water.
  3. Mix all the other ingredients together in a large bowl and the pour in the melted chocolate mix, stir together.
  4. Spoon mix into cake tin and refrigerate or night.
  5. Slice into square pieces.
