Rosemary Lamb Chops

Sometimes the most delicious foods are the simplest. Lamb is rich and tasty especially when it is of the bone, so there is no need to do much to chops, just make sure you have a good bit of lamb and it will do all the work for you. Rosemary and lamb is a traditional combination, rosemary complements lamb beautifully it adds a depth and warmth of flavor.

Rosemary lamb chops are very easy, with few ingredients, so hopefully you will already have most of the things you need floating around your kitchen cupboard, if not it doesn’t involve much shopping.  Whether you are cooking for your family or just for yourself this is a scrumptious recipe that taste great and goes deliciously with roast potatoes or mash.

Ingredients

  • 1 tbsp balsamic vinegar 
  • 3 tbsp rosemary
  • 2 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 4 garlic cloves, minced
  • 1 teaspoon ground black pepper
  • 4 lamb chops about 3 inches thick

Method

  1. Mix together ingredients in small bowl, except lamb. Place lamb chops in a dish. Pour marinade over and cover. Leave to chill in refrigerator overnight.
  2. Before cooking leave out of refrigerator for 15 minutes.
  3. Prepare barbecue or grill, medium to high heat.
  4. Cook on each side for 4 minutes basting often with the marinade.
