Sausage And Bean Ragout

There is nothing quite like a hearty stew on a cold rainy winter day. Ragout is the French word for stew. Sausage and bean ragout is ideal for a hectic family life; it is so cheap, quick and tasty, leaving plenty of time to have an enjoyable, sit down meal with the family.
For those of you trying to look after yourself this is a nutritious meal, beans are wonderful foods they are cheap tasty and have so many health benefits. Cannellini beans are a great source of iron, magnesium and folate. Beans are high in protein and have a low glycemic index, so you will have plenty of energy for the rest of the day.
Ingredients
- 3 tbsp olive oil
- 1 can, 350g cannellini beans, rinsed and drained
- 1 finely chopped onion
- 2 garlic cloves crushed
- 450g good quality chunky sausages, skinned and thickly sliced
- 1 tbsp of tomato puree
- 400g can of chopped tomatoes
- 1 tbsp of fresh chopped basil leaves
- 1 tbsp of oregano
- Salt and pepper
Method
- Heat the oil in a frying pan over median to low heat. Add the onions, garlic and sausages and cook until golden brown.
- Stir in the puree, chopped tomatoes, oregano and basil. Season with salt and pepper and bring to the boil
- Add the beans, lower the heat, cover the lid and cook gently, stirring occasionally for about 15 minutes until sausages are cooked through.
