Sausage And Bean Ragout

There is nothing quite like a hearty stew on a cold rainy winter day. Ragout is the French word for stew.  Sausage and bean ragout is ideal for a hectic family life; it is so cheap, quick and tasty, leaving plenty of time to have an enjoyable, sit down meal with the family.
For those of you trying to look after yourself this is a nutritious meal, beans are wonderful foods they are cheap tasty and have so many health benefits. Cannellini beans are a great source of iron, magnesium and folate. Beans are high in protein and have a low glycemic index, so you will have plenty of energy for the rest of the day.

Ingredients

  • 3 tbsp olive oil
  • 1 can, 350g cannellini beans, rinsed and drained
  • 1 finely chopped onion
  • 2 garlic cloves crushed
  • 450g good quality chunky sausages, skinned and thickly sliced
  • 1 tbsp of tomato puree
  • 400g can of chopped tomatoes 
  • 1 tbsp of fresh chopped basil leaves
  • 1 tbsp of oregano
  • Salt and pepper

Method

  1. Heat the oil in a frying pan over median to low heat. Add the onions, garlic and sausages and cook until golden brown.
  2. Stir in the puree, chopped tomatoes, oregano and basil. Season with salt and pepper and bring to the boil
  3. Add the beans, lower the heat, cover the lid and cook gently, stirring occasionally for about 15 minutes until sausages are cooked through.
