Scotch Egg

This Scottish delicacy of an egg wrapped in sausage meat, dipped in bread crumbs then deep fried is perfect junk food.
Scotch eggs are finger food, they are great for picnics or as a lunch box snack and are always a welcome addition to any buffet. Scotch eggs are normal served cold so you can make a large batch of them the day before your party, have less work to do on the day and you can put your feet up and celebrate.
Ingredients
- 4 eggs
- 300g sausage meat
- 1 tbsp minced parsley
- ½ tsp sage
- 25g plain flour
- 1 egg, beaten
- 75g bread crumbs
- Oil for deep frying
Method
- Boil the 4 eggs and leave to cool.
- Peel and refrigerate the eggs.
- Combine the sausage, parsley and sage, mix well and divide into 4 portions.
- Dust the eggs in flour and dust your hands.
- Wrap the sausage meat around the eggs.
- Dip in the beaten egg then roll in the breadcrumbs.
- Heat oil in a deep fat fryer to 180C and fry the eggs for 4 minutes each until they turn golden brown.
