Special Fried Rice

This Chinese take-away classic is very fast food, even when cooked at home, and great for using up leftovers. If you have any rice from the day before great, fried rice is best when cooked with cold leftover rice straight from the fridge, and feel free to alter the recipe, sliced up left over sausages work well. Cooking special fried rice at home is great, unlike a take-away you know what is in the meal, so you end up with a very tasty and nutritious dinner.
Ingredients
- 175g long grained rice, already cooked
- 2 eggs lightly beaten
- 3 tbsp ground nut oil
- 1 garlic clove, crushed
- 3 spring onions finely chopped
- 100g prawns, defrosted and peeled
- 50g frozen peas
- 100g cooked and sliced chicken
- 2 tbsp light soy sauce
- Pinch of caster sugar
Method
- Heat the oil in a wok, add the garlic, and cook until golden (should only take a few seconds).
- Add the prawns and chicken, then rice, and stir fry until ingredients are warm.
- Add in peas, then the eggs, stir fry until egg is set.
- Stir in sauces and sugar, add spring onions.
