Spicy Crayfish Salad

Crayfish are freshwater crustaceans that look a bit like small lobsters, but they taste sweeter with a firmer texture. Crayfish tails are available in supermarkets throughout the year. Crayfish tails from a supermarket will most likely be pealed and already cooked; they look similar to prawns but redder. 

Crayfish tastes wonderful in a fresh, cold, salad, very refreshing and perfect on a hot summers day. The fresh raw vegetables complement the sweet crayfish. Spicy crayfish salad is very quick and easy to make. The onions, garlic and chilli are full of strong, tasty, flavours that work beautifully together, while the lemon juice, tomatoes and lettuce are juicy and refreshing.

Spicy crayfish salad is ideal for a relaxed lunch sat outside with a glass of white wine making the most of the glorious weather, or if you are stuck at work it makes a refreshing, tasty, change from a sandwich and will brighten up your lunch. This delicious salad is a very healthy meal, if you are trying to find a tasty low fat, balanced meal this is perfect. Your waist line will start shrinking in no time.

Ingredients

  • 250g crayfish tails
  • 1 spring onion, chopped
  • 1 tbsp fish sauce
  • 1 garlic clove, crushed and finely chopped
  • 1 small green chilli, chopped
  • 1 lemon
  • ½ tsp sugar
  • 1 red onion, finely sliced
  • A few lettuce leafs
  • 10 cherry tomatoes halved

Method

  1. Mix the fish sauce, chilli, garlic, sugar, onions and lemon juice. Then gently toss in the crayfish.
  2. Lay a bed of lettuce and tomatoes in a bowl and arrange the crayfish, onions and sauce on top.
