Spicy Sausage Rice

A quick tasty recipe perfect for a busy family. This recipe is cheap, notorious and makes the most of yesterday’s left over sausages.  This is a great recipe to try and get children to explore different foods, it is a bit like a simple risotto or paella, so if your children enjoy seafood try adding some prawns in. There are lots of possible variations on this recipe, go experiment.

Ingredients

  • 225g rice, basmati rice is best
  • 4 cooked sausages, sliced
  • 1 onion
  • 1 red pepper
  • 1 tbsp olive oil
  • 450ml stock
  • 1 tbsp basil chopped
  • 1 tbsp tomato puree
  • 1 red chilli de-seeded and chopped
  • ½ lemon

Method

  1. Heat the oil in a pan; cook the onions peppers and chillies, stirring frequently, until soft.
  2. Stir in the rice and stock, cover and simmer for 20 minutes, until rice is tender.
  3. Stir in the sausages  and puree, squeeze lemon juice and cook for a further 5 minutes.
  4. Add chopped basil and serve.
