Spicy Sausage Rice

A quick tasty recipe perfect for a busy family. This recipe is cheap, notorious and makes the most of yesterday’s left over sausages. This is a great recipe to try and get children to explore different foods, it is a bit like a simple risotto or paella, so if your children enjoy seafood try adding some prawns in. There are lots of possible variations on this recipe, go experiment.
Ingredients
- 225g rice, basmati rice is best
- 4 cooked sausages, sliced
- 1 onion
- 1 red pepper
- 1 tbsp olive oil
- 450ml stock
- 1 tbsp basil chopped
- 1 tbsp tomato puree
- 1 red chilli de-seeded and chopped
- ½ lemon
Method
- Heat the oil in a pan; cook the onions peppers and chillies, stirring frequently, until soft.
- Stir in the rice and stock, cover and simmer for 20 minutes, until rice is tender.
- Stir in the sausages and puree, squeeze lemon juice and cook for a further 5 minutes.
- Add chopped basil and serve.
