Vanilla Cupcake Cheesecake

These very pretty, cupcake size cheesecakes are wonderful. Great for a little snack with tea and even better when guests pop round, you will fool them into think you are the perfect housewife or househusband.

Dress up with fruit and icing sugar, a drizzle of honey, or ice cream to make a perfect dinner party dessert.  Lots of mini cheesecakes on a tray with scattered strawberries look very cute and very irresistible for the grand finale to a summer garden party.

Ingredients

  • 100g of biscuits
  • 50g unsalted butter
  • 400g cream cheese
  • 150ml soured cream
  • 110g sugar
  • 1 medium egg, plus one egg yolk
  • ½ tbsp vanilla extract

Method

  1. Preheat oven to 160C or gas mark 3. Crush the biscuits into fine crumbs.
  2. Melt the butter and stir into the biscuits.
  3. Line the bottom of 12 muffin cases, in a muffin tin, with the biscuit mix. Chill in the fridge.
  4. Beat the cream cheese and soured cream together until fluffy. Add the egg and beat, and then the yolk and beat, and then the vanilla extract. Mix well.
  5. Bake for 20 minutes until the cheese cakes begin to colour.
