Vegetarian Mushroom Stroganoff

A quick, easy and very tasty vegetarian variation of the popular traditional Russian stroganoff. For anyone who loves mushrooms this is a perfect, meal, I recommend wild mushrooms for that extra taste of luxury, they go beautifully with the rich creamy sauce.
Mushroom stroganoff is a perfect dinner for winter. The rich earthy flavours of the mushroom and creamy warm sauce are very comforting on a cold evening. A wonderfully quick convenient recipe that takes less than 20 minutes, ideal for a busy weekday.
Ingredients
- 45 ml/3 tbsp olive oil
- 500g mushrooms (3 different types)
- 1 onion, sliced
- 2 cloves of garlic (crushed)
- 150ml white wine
- 300ml crème fraiche
- 1 tbsp of chopped fresh thyme
- Chopped parsley to garnish
- 1tbsp paprika
- Rice to serve
Method
- Heat the oil in a large frying pan over low heat. Cook the onion and garlic, until soft and stir in the paprika.
- Add the mushrooms and white wine, bring to the boil, then reduce the heat and simmer.
- Stir in the crème fraiche and heat to just below boiling point. Stir in the thyme, sprinkle over parsley.
- Serve with rice.
