White Chocolate Blondies

If you have a sweet tooth and like chocolate brownies, cameral slices, and rocky road, you will love blondies. White chocolate blondies are so chewy, sticky, a bit childish and taste great. They are a perfect lunch box snack and great to bring out with you have guest round for tea or coffee.       

Ingredients

  • 225g white chocolate chips
  • 2 tsp vanilla extract
  • 115g butter, softened
  • 155g all-purpose flour
  • 2 eggs
  • Pinch of salt
  • 65g white sugar
  • 170g milk chocolate chips

Method

  1. Preheat oven to 180C or gas mark 4. Grease a 22cm or 9 inch square baking pan.
  2. Melt white chocolate and butter in a heat proof dish, over a saucepan of barely simmering water. Stir occasionally until smooth. Set aside to cool.
  3. In a large bowl, use an electric whisk to beat eggs until foamy. Gradually add the sugar and vanilla then gradually add in the melted white chocolate mixture. Fold in the flour and salt and finally add in the chocolate chips.
  4. Spread the batter evenly into the prepared pan.
  5. Bake for 25 minutes in the preheated oven.
  6. Leave the pan to cool on a wire rack before cutting into bars.
