Is the Premium version a good system and how much better is the Elite version?

The actual make-up of the system is the same, they all have the same processors and suchlike.

The Elite model comes with a much larger Hard Drive than any of the other models. It used to be the only one with an HDMI connection for HDTVs, but I believe the Premium ones come with that.

The larger HDD is pretty much essential now as Microsoft are really pushing their film downloads and with an ever increasing amount of original Xbox games available for download you really need the space on your Hard Drive.

Other than that, the only difference is that the Elite is black instead of white

altho they all come with an hdmi slot and cable now, the elite is the only one that comes with a 5.1 audio dongle which may be of interest to you.
Although, having said what I said it took me over 2 years to fill up a 20GB HDD and the new Premium models have a 60GB HDD.

Plus I saw an offer in Blockbusters to get a Premium 360 with Halo 3 and PGR 4 for �170 - that is an absolute bargain if you ask me
bigger hard drives will become much more necessary after the next dashboard update as full game installs will be possible so a 20 gig hdd(13 in reality) will simply not cut it.
