Good morning dothawkes31. It's amazing what you have been able to find out. I have tried to find the census entry for 1861 that you mention when you say that Fanny was working for the Tomlin family in Taunton. I can't get that up on the findmypast website. Perhaps you can tell me what route to take.
When Fanny married my great-grandfather at Bishops Hull, Taunton, in October of 1864, her residence is given as Nether Stowey. This is a village north of Taunton. We have been there a couple of times & it has one or two large houses so she may well have been in service there. No occupation is given for Fanny on her marriage certificate & her age, and that of Henry, is just given as 'of age' so presumably she was 21 or over. Her father, William White, is listed as a farmer so is unlikely to be the same William White that you found listed as an accountant.
My great-grandfather, Henry, was a miller. The family lived in Much Cowarne, Hereforshire, for a few years and it was there that my grandmother, Emily, was born. After leaving there, the family moved to Pitchcombe, a village just outside Stroud, and it was there that Fanny died on 17th January, 1900. Her age on her death certificate is given as 62 years. If the age on Fanny's death certificate is more or less correct, then she was indeed likely to have been born in 1838. Henry's occupation on his wife's death certificate is given as gardener.
