Pork and apple meatloaf
250g pack of minced pork
2 good quality sausages, skinned
1 eating apple
1 onion
1 clove garlic
1 teaspoon dried sage
1 teaspoon dried thyme
1 thick slice of bread made into crumbs
1 small egg, beaten
salt and black pepper
1/2 a teaspoon grated lemon zest
fry onion and garlic in a little oil and drain. discard oil. Peel and core and slice apple, cook in a little water until puréed. Add a little sweetner if reuired. Break up mince in a bowl and add sausage meat, and the rest of the ingredients, mixing well.
place in a roasting tin and cook 180C gas 4 or 350F for about 40 - to an hour depending on how thick/thin it is. Serve with mash, greens and onion gravy. should be some left over for cold too - nice on a sandwich
