Can anyone tell me why men used to tweak the knees of their trousers before sitting down? Was it something to do with the crease down the leg? Dont see anyone do it these days!

That's because fashions have changed to accommodate all the fatties. Now that fat people are in the majority, trouser legs tend not to be so tight.
even more, if the trouser knees clung to the wearer's knees enough, then when he sat down the trousers would be pulled down from the top, exposing his underwear.
Astonishingly, this used to be considered a bad thing.
As you sit down, you tug the thigh of your jeans up a bit.
If you don't, as snags suggests, the fabric pulls too tight over your knees.
Even in a skirt, you have to tidy the fabric when you sit down (unless you're wearing a "pussy pelmet", in which case there's not much point) (nb. I don't wear those).
The inside of the cloth can stick and the knees could go baggy but good quality trousers are lined with satin although one still does it out of habit. Women do the same with skirts.
