I am doing a study to investigate how the preservation methods of strawberries can effect the vitamin c content, but i am finding it difficult to find any info on the processes of freezing and canning them and why the vitamin content would differ.
Also does anyone know whether added colourings may have an effect on the vitamin content i.e. allura red (E129)?????????
