What about the use and care of animals in the First World War? Horses, of course, were used extensively to pull guns, limbers and supplies of all sorts. Carrier pigeons carried messages, sometimes in the wrong direction ! And canaries warned of gas in the trenches and tunnels of the front line. Dogs too, played their part, sometimes to carry first aid items to those lying wounded in No-Man's land.
What sort of veterinary care was laid on to look after these creatures ?
Did some of them earn medals for gallantry ? I think you will find they did. Plenty of scope for an interesting project.

How about the events leading up to the armistice? you could start with the Germans final push in March 1918 which failed, leading to a full blown allied offensive (led by the British at Arras) ulitmately causing the german navy (which had been bottled up in Kiel by the Royal Navy) to mutiny and the abdication of the Kaiser.
trench conditions would be a good one to do.
also, related to the xmas football truce, there is another myth of how a soldier went over the top dribbling a football, got over to the germans trench, and when he had to retreat from their trench and got back to the british ones he still had the football! this was used as a source in a GCSE history exam.

Why not do something on Edith Cavell, an English nurse living in occupied Belgium she helped British and French soldiers escape to neutral Denmark until she was captured and shot by the Germans. Her last words were "perched as I am between god and eternity I realise now that patriotism is not enough I must not bear any hatred or bitterness towards anybody" she also had a colleague on the Lusitania, who had been fundraising in America, who drowned. The film "Carve Her Name With Pride" is loosely based on the story.
