Does a 60cm induction hob have to be fitted directly over a 60cm unit or can it be off set ie, if a 30 & 60cm base unit were next to each other then could the hob be installed over the two units or not. Hope that makes sense.

Yes. It may require a little cutting of the base unit walls, but I've done it with a sink unit.
Canary's right, puss. Maybe a little bit of cutting down the top edge of the base unit.

I've even fitted hobs over drawer units.
