I've recently had part of my walls re plastered after damp proofing and am getting them papered in August. Will it be ok to start sizing the walls now or is it better to wait until just before papering? TIA

I would leave it long as you can, leave the windows open as much as possible. When the plaster was mixed there was lots of water used, because the plaster has hardened, it doesn't mean it has gone away, it's still in there and has to dry out.
There is no advantage in sizing now, leave it until just before you start papering.
I couldn't agree more with Khandro. Leave as long as possible, or you'll retard the drying process.
