Will be wallpapering two rooms in my house soon which have wall lights fitted - I know how to fit wallpaper over light switches, but how do you fit it professionally over wall lights? (the section actually touching the wall is only about 4 inches diameter, and is circular, but the wall lights themselves are doube lights and are quite large...)

I don't think the second solution offered (by beachy) would work unless you cut the whole length of wallpaper in two and 'edged it underneath' from top and bottom separately.... which would look awful at the horizontal join.
If you would prefer not to remove them completely, you can do what beachy suggests, but in order to get the paper around the lamp, cut a large "X" in the paper at the correct position and feed the lamp through it as the paper is pasted to the wall. Work the edges in behind the light, remove the centre bit with scissors, and close up the cut edges. They should be virtually invisible when the paste dries. Good luck.
