I wish to connect a cooker with a total load of 11.2kw and wish to know whether I can use 6mm twin and earth cable.

Help would be gratefully appreciated.

Wouldn't an electrician apply diversity factor to the rating of the cooker ?
No - you apply diversity to a group of circuits on the assumption that they won't necessarily all be used at once. However for a single device you use it's maximum rated load.
