Is the difference between a cooking apple and an eating apple only the sweetness of it?

Thanks for that Trim. I just picked some apples from the roadside and they are a little bigger than normal and a little more sour than eaters. So I'll treat them as cooking apples. I only know what Granny Smith's look like in the way of cookers. Cheers.
Well I find cooking apples puree more easily than eating apples, that's why things like tart tatin use eating apples
I have to disagree. Cooking apples generally break down more when cooking. Cooking apples taste quite unpleasant raw. Especially Bramleys (which are the best ones) Bramleys have quite a thick skin and can be quite large. Lucky you finding some by the roadside. Incidentally, you can cook any apples but if you want puree Bramleys are best.
