This gives some useful on harvesting without damaging the plant. Looks like nearer the end of the month would be better.

I've been pulling my rhubarb for a few weeks now, but the stems are red. I'd be inclined to leave it a bit.

No expert but if I recall as a kid, the rhubarb that went with the custard was both red & green. I suspect that the green needed more added sugar ;-)
