Aubrgines Losing Colour

I have two aubergine plants in the greenhouse and they are losing their colour. Instead of being well, aubergine colour, they are going green. They have also been attacked by (probably) snails. Are they still edible? Thanks in advance

Many thanks, Danny. Very helpful. I've just cut one open and it looks immature in that there are not many seeds in it. Plan A was moussaka but I am not too sure now. I'll try one of them with other roasted vegetables tomorrow. When I think of all the TLC and tomorite I have spent on them, I could weep!
