Hi,

How do I know which way up to plant my peony tubers????

With the "eyes" or pinkish buds pointing up. Don't plant them any deeper than about 2 inches... most folks tend to plant much to deeply. They're very hardy. We've several here in the western U.S. that have been around for years. In fact, we've had to thin them and we regularly experience winter with temperatures around -20F. They are so hardy they are known as graveyard bushes since a lot of people plant them next to headstones and forget about them... Good luck!
One other point. Be sure to be entirely happy that you've selected the right permanent spot for your peony because these plants sulk notoriously if you dig them up and move them and it will often be a couple of years before they start flowering again.
