Why do potatoes keep growing and sprouting when they're at home in the cupboard? Maybe a search for water?

I do the same.

I think it's a natural reaction to being in the dark, they sprout to try to find the light.

Thanks boxtops, I suppose in a couple of million years they would have evolved so much they'll literally walk out the cupboard and hop onto the window sill!Lol.

I think that it is just at this time of year when it is natural for them to try and start growing to start off regeneration.
