pruning overgrown evergreen plants

Can anyone advise me about cutting back and pruning various evergreen plants in my garden, one of them is a holly bush, no idea what the other one is (gardening is definately not my forte!!!) they are starting to overtake the garden. Do I cut them back to the last leaf to leave some green on them or can I cut them all the way back. Worried about cutting them back too much and them never growing back again. Any tips would be most appreciated. Sorry for being so vague!

established green holly you can cut down to a foot high and it will shoot again...need to know what the others are to comment...be a bit gentler if the holly is golden or variegated.
