Coving on a sloping wall

The wall that forms our chimney breast slopes at the top as it meets the ceiling. I have tried to cut a wedge of wood to square this area off in order to attach coving but have ben unnsuccessful.

Does any one know of a better method or have tips on how to cut this wedge?
