i have some white towels that are looking a bit greyish (not stained as such but you kopw ho whites g after a while). I'd like to bleach them by soaking for a few hours in the bath. What mix water to bleach ought I to use. (I don't want the towels to go yellow)

just put a splash into your washing machine on top of the towels and give them a boil wash
Try one (or all) of the followig...

Here in the western U.S., we have hard water, which is (according to Mrs. Snodgras next ranch over)what actually causes dinginess (even in laundry). So, you could add a softener product to the wash water. Most here use Twenty Mule Team Borax.

Second, this works here
1 cup powdered Cascade (or your brand of automatic dishwasher powder)
1 cup Clorox (or your brand of bleach)
Add to 5 gallons of the hottest tap water. Soak overnight

Lastly, Mrs. 'C' swears by hydrogen peroxide as bleaching rather than chlorine based products. I do know, if the towels or white sheets are hanging on the line outside and the sun is bright, I have to wear sunglasses when I walk by!
You can buy hydrogen peroxide at the chemists, but it is a low percentage, about 6%. Is this strong enough ? I just use bleach, about two capfuls in the bath, lovely and white.
Or dye them a different colour altogether with something like Dylon?
Glo White is good and all large supermarkets stock it.
netglo is also good x
