Can anybody tell me how long I should roast celeriac and butternut squash for.

If you're talking about sliced celeriac, roast for 30 to 40 mins Gas mark 6/400F/200C.

 Sorry, I've never cooked butternut squash.

Butternut squash should be roasted slightly less than the celeriac, but it won't hurt if it's the same time and temperature.

Depends how you do it. I adore BN squash. But the peeling!!!!

So I often cut it in half lengthways, then just roast for about an hour on 180. The skin then just falls off. I then mash it, with goats cheese, and black pepper, and serve with red wine gravy. Yum.

No need to peel it - melon like slices roasted for 30 minutes at 200 with a bit of olive oil and basalmic vinegar, and you can eat the lot!

Hmm. You eat the peel?

Have you tried the variants on BN squash? Never sure what to make of them.
