toilet damp stains

my downstairs toilet had a leak while we were away, it happened before so we have decided to strip it out and replace it all including flooring etc. i have just taken the flooring up and removed the skirting, and amidst the smell and the damp i have found black spores behind the skirting, and also quite a bit of the plasterboard came away with the skirting its crumbling (up to about 2- 4 inches above floor).
tips, should i cut out say 5 inches of plasterboard and replace, or will time to dry out + stain block and patching be enough ? i'm good at diy, plumbing and tiling etc, but not really a plasterer so i'd like to avoid it if i can.
