curry split

i made a fish kerala curry last night. i made the sauce first which included light coconut milk. i then added some red peppers that were sprayed with oil and quickly cooked in the microwave, then i added prawns, hake , salmon, a few scallops and a bit of chilli. mixed it all in the put it in the oven. when i took the curry out the sauce seemed to have split. my guests said they loved it, i just hope they didnt notice. so what made it split?

The only thing I can think of is that that light coconut milk is really just 50% coconut milk and 50% water so in reality there is no such thing as low fat coconut - just watered down coconut. I would never cook it in an oven either. A Wok is normally the way to go.
