Eco combi boiler

I have a combi boiler with an eco button. The manual advises me to open a tap and shut it then open it and let run for more economy. I have noticed that if I open the tap and let it run (like I did with the old boiler) the boiler makes a different sound to when I've opened then shut and opened again. Does anybody know why and what the boiler is actually doing?

oh yes, we have some french plans for 2012, wouldn't be the same without at least one extended trip across the channel. we're pondering tarn gorges and then eastern med coast in may/june, neither are areas we know at all so hopefully it should be an interesting trip.
