Cooking With Pickled Onions?

I have a jar of white pickled onions (large ones, not the small ones), in white vinegar. We didn't really like them but I really hate throwing good food away. I keep wondering what a beef stew with said pickled onions would be like? Has anyone tried cooking with pickled onions in this way? Would you rinse them first, or just drain them? Better still, have you got a tried and tested recipe? I think I would like to use the slow cooker.

Then make some cheese on toast, slice the onions when the cheese is nearly ready and put them on the cheese and back under the grill until the onions have just begun to brown. Top with ketchup or brown sauce and you have a delicious snack. Add salad and you have a great meal.
