This the plants first season. -Do I cut it all the way back for the coming winter?

We do
I've just been informed by the family gardener (wife) that it will soon start to throw up new shoots; this year's growth will turn white and then you can cut it off.

Would it also be wise to store it overwinter in my garage- it's in a tall terracotta container.....?
wrap it in frost fleece or bubblewrap. Its the roots (and the pot) that are at risk.
