Composting Grass Cittings

googling compost i found the info that dry grass cuttings are high in carbon
and damp cuttings are high in nitrogen ( which i dont need - i want more carbon ).
i have dried out some cutting but they will obviously dampen up again when added to the compost.
so can anyone explain the point of drying the cuttings in the first place?
