I have my heating & hot water switched to off. The boiler unit keeps 'firing up' for about 1 minute then stopping, it repeats this approx every 2 minutes?? It is a vaillant ecotec plus. The temp on the display drops to approx 55 when it fires up until it hits approx 77, stops and temp reduces back down to around 55 and then starts again?

Have you got a fault code on the screen ? I have the same boiler - luckily only had one fault in 8 years and there was a code on the screen. Googled this and it gave the results for that code. (Can't remember what it was though !) Good luck

Its in comfort mode...it stores a few litres of hot water for immediate demand. It fires up to keep the water up to temp. This function can be programmed out.
Got similar boiler and it is probably as Ryzen says and the comfort setting is on. Having it on does save waiting so long for hot water to come through. It can be turned off though.
My boiler has this function. I can switch it to eco mode.
