why is this not safe and/or why is one advised not to store an opened tin in the fridge?

If you leave food in an open tin in the fridge it will soon take on a "tinny" metal flavour. This is often why cats and dogs refuse to eat their petfood if it is kept for a second day. I keep a few small plastic containers with lids and empty any left over tinned food into these. It's a little more trouble but the food always stores perfectly without tasting tainted..
