Rhubarb going to seed is quite normal. The plant is just doing what it needs to survive.. reproducing.
A number of things can cause this, too much heat, pests, the age of the plant and stress. Not forgetting lack of water. (We have just had the dryest spring in sixty years).
You are not alone, this is our worst year in our 10yrs. as allotment holders.
We lost every tomato three weeks ago ..70 plants. Every onion 3 months ago ..500 plants. The late frosts and the cold spring have taken their toll.
I've had some 4 feet tall without leaves but a big head of frothy-looking stuff on top!. The crown has gone mad too,
Zebo, that's the flower stem. Pull it out unless you want seeds.
