plastering large area

i have plastered before and i am quite good at it in small sections. how do i do a ceiling 5m x 4m? do i do the lot in one go i.e. mix one bag, put it on then another till covered then second coat it or do i mix one bag and finish a small area first then move on, if it is the latter where do i start and how do i blend the second area into the first?

I am an experienced builder and my advice to you would be to get a plasterer as ceilings are probably the hardest areas.The ceiling should be done in one hit.
