We keep ours between 4 - 5 degrees.

It should be less than 5C (41F).

so in other words it should run at any temperature above 5c and stop running when the temp is 5 or below :-)

lower than 5 degrees is best as bacteria develops between at temps higher than this

The new legal requirement is 8 degrees celsius it used to be 5 degrees celsius. So therefore between 5 and 8 degrees celsius is ok
