Yes because they don't make plasterboards big enough to cover the whole ceiling in one go! Unless it is a small one obviously.

:)

You've made me smile.

If you are doing it on yourself go for 6 x 3 3/8 inch thick, you will never lift an 8 x 4 sheet

If you haven't done it before, get someone to help (you'll never lift and position the boards on your own). Also, use scrim tape along the joins so they won't crack when you plaster over them (use a little bonding to fix it in place). Make sure you use drywall screws too (ordinary ones aren't suitable and will probably show through) and make sure you drive them just below the surface of the board.

And when it comes to the plastering, don't try to do it perfectly on the first go, just get it more or less 'flat', then, after a little 'going off' time, you'll find it not too difficult to finish off nice and smooth (as it starts to dry out, flick a little water on it as you smooth it out).

Have fun!

Also use a 'deadman' which is basically a couple of sturdy lengths of 2x2 arranged into a tee shape, just long enough to wedge the board firmly against the ceiling leaving your hands free to fix the board (and generally contemplate the whole situation).
