What is the easiest thing to grow in an English or Scottish garden? as in produce, eg rhubarb!

Mint. And try to plant some spuds to go with it.
Broad beans,peas,lettuce,spuds,radish,carrots,onions from sets are all easy to grow. Will need varying degrees of protection from pests,but not much else
Weeds.

Nettles and dandelion leaves are good in salads, I'm told.
if you do mint, grow it in a pot, apparantly its rampant and will take over your garden.
Hardy greens like leeks, broccoli and curly kale. Scottish gardens may be too cold for tomatoes to ripen in short summers and beans don't thrive in the cold.
